Bob Marley One of the first shows I ever worked on. This was at the Santa Barbara Bowl. There was a downstairs dressing area and instead of using a catering service he and the Wailers brought their own people, I assume from Jamaica. They didn’t want any white people to touch the food only their crew, this was for religious reasons. I recall that they ground up coconut and sort of battered some fish with this and grilled it. Bob was much shorter and smaller than I imagined and as I am not too tall he was about my size. He had an intimidating look and I was young and for some reason felt a bit intimidated by him. Great show and boy did he and his crew/band smoke the weed. This was the one and only show I worked with Bob. Little River Band.. Nothing much to recall, seemed nice. Black Sabbath/Blue Oyster Cult-Ventura Fairgrounds. Well, I don’t like this kind of music but they were surprisingly nice and friendly. I doubt anyone will remember a band called “Honk” but they were from Laguna Beach and did the soundtrack for a surfing movie called “Five Summer Stories”. For shopping when little, Mom would give us each some money and take us to a shopping center where we would have fun shopping. When we were older, the girls and I would go together and shop. I worked for a railroad construction and maintenance company. We were on call 24-7 to respond to a train wreck to make repairs and get the trains running again. Train wrecks – and that’s what they are – are not derailments, a much sanitized term to get away from the carnage that is a train wreck. A derailment, technically is when a wheel comes off the track. And that happens all the time. Remember the only thing keeping a wheel on a track is weight and track alignment. If either of those fails, a wheel, or multiple wheels can come off. That’s why they have re-railers every so often to kick those wheels back onto the track. A train can run quite a while with a few wheels on the train not on the track. So what causes train wrecks? So those are some of the different steaks but to answer your question in a more general way, the cuts of steak, and of beef in general, are determined by where on the cow they are from. There are eight primal cuts, essentially if you had the whole beef carcass you would start by cutting it in to the primal cuts: chuck, rib, loin, round, flank, short plate, brisket and shank. These cuts would then be cut into the smaller more familiar cuts of meat. For example the loin would be cut into the sirloin, tenderloin, top sirloin, etc. These cuts can then be cut again, for example the bottom sirloin subprimal can be cut to give you the tri-tip (my favorite cut of beef, though possibly because it is the one used for our local Californian Santa Maria-style barbecue. But there is more too it. Different muscles are used for different things on the cow. Some are for standing around, some are for walking; and this affects the taste. Brisket, for example, is one of the most highly used muscles on a beef and consequently it gets very tough, which is why it is often corned for corned beef, corned and smoked for pastrami, barbecued (a specialty of Texas), or slowly braised. But along with the toughness (which goes away with long cooking) comes a Los Angeles Clippers T Shirt of beef-rich flavor.
